Hey, I lived in Germany for 8 years - my father was in the military. My favourite thing to eat was the frites with mayo - God that was good. I finally found the good type of mayo at a Dutch grocery store here in town. Keep up with your search for the schnitzel, man. You'll find it someday. If not, I'll go to your place and make it for ya! :-)

Unfortunately, I have had a similar incident with expensive meat and lemon juice. What I have been told by those in the know is that the acid in the lemon juice--when left in contact with a "delicate" meat such as veal for an extended period of time--essentially cooks the meat. So by the time you fried it, it had already been "cooked" once. While such techniques are good for tough pieces of meat like a flank steak, with veal, you are essentially making high grade shoe leather at that point.

Maybe the weinerschnitzel was reminiscent of "the ass end of a menstruating skunk"? I walked past a dead cow that had been drowned in a Texas flood once. I heard a rustling behind me and turned to take a look. Lo and behold, a possum had burrowed into the carcass and was eating it from inside out. Long story short; try soaking the veal in milk next time.

I was a foreign exchange student in Austria and was talking with someone about cooking some of the food I had tried in Austria when I got home. Someone who had traveled here said that you really can't cook proper Wienerschnizel here because our veal isn't fresh enough and it will never be the same...

Even San Antonio has a German restaurant that'll make you want to cry with joy. I always get the ramschnitzel, and I don't know what that meat is, but it's fried, and has gravy and those little pan-fried German potatoes...oh my. I will never try this at home.

What happened was that the acid denatured the proteins in the veal WAY too much... You should read a little bit about food science - it's very interesting and you learn all kinds of nifty things about why food does what it does. (BTW, I'm in culinary school. It was required learning)

Hey Uncle Bob, I've been reading you for a while but I've never said hi before - sorry. I've decided to jump to your rescue though with the Wiener Schnitzel (I'm from Vienna and a chef) so here's the original recipe that definitely works. Beat the meat until it's fairly thin (heavy wooden chopping board works fine if you don't have one of those meat hammer thingies), season moderately with salt and pepper, cover with flour and shake off any excess (very important!). Whisk one egg with a pinch of salt and stir in 1 to 2 table spoons of sparking water. Cover Meat with egg and then with breadcrumbs. Press on the breadcrumbs so the crust stays on while frying and then fry the Schnitzel swimming in oil. It shouldn't touch the bottom of the pan because it destroys the crust. Dizzle some lemon juice on top just before you eat it. There you go, hope that'll bring your childhood memories back :)

As a military brat who has the privilige of living in germany also, I feel your pain. I too attended Baumholder but lived in Idar Oberstein on Strassburg Kaserne. The one thing I have not done since I returned from Germany over 15 years ago is attempt to make or visit any place that sells "authentic german cuisine". I just can't bring myself to spoiling the memory. Aside from hitting up German delis for coldcuts and brotchen or those damn tasty cherry gummis...I will not soil my tastebuds with anything less than the original when it comes to jaegerschnitzel, currywurst, schnitzel sandwiches and especially speissebraten. (I'm salivating now). No...instead I've decided I'm returning to Germany during Oktoberfest some day and hitting EVERY DAMN IMBISS STAND I SEE!!!!!
